How to store your matcha
Airtight, dark, cool — 5 to 15°C. Use within 4 to 6 weeks after opening. Always seal tightly and rotate stock. Store matcha and hojicha separately.

How to prepare your matcha
Use 3g per serving, always weigh. Sift through a fine sieve. Whisk with 30 to 40ml water at 60 to 80°C until smooth. Pour over ice and top with cold milk. Serve immediately.

Common mistakes
Water too hot creates bitterness. Skipping the sift creates clumps. No scale means inconsistent flavour. Improper storage leads to dull colour and flat taste.

Which grade for which purpose
A+ for daily lattes, smooth and consistent. A++ for premium menus, naturally sweeter. B++ for desserts and baking. Hojicha for evening menus, roasted and low in caffeine.
BARISTA TIPS
What every barista should know
Be able to tell customers where your matcha comes from. "Our matcha is sourced directly from family farms in Aichi and Shizuoka, Japan. First harvest, EU Organic certified."
Ceremonial matcha contains around 35mg caffeine per gram. A 3g serving contains around 105mg, similar to a strong espresso. L-theanine gives a calmer, more sustained focus than coffee.
For high-volume service, batch your matcha: mix with cold water (1g per 10ml) and refrigerate. Shake well before use and make fresh batches every 4 hours for best quality.
Use 60 to 80°C. Never use boiling water, it scorches the matcha and creates bitterness. Consider a temperature-controlled kettle for your matcha station.
Matcha drinkers are curious. Share the origin, the grade, the flavour. "It's smooth and naturally sweet, no bitterness." Confidence builds trust and repeat customers.
